- Uncle Jack Scheimreif whisperin' in your ear...watch yer fingers, sonny, sonny boy...that snappin' turtle means business!
Uncle Jack Scheimreif was a New Jersey bayman. There wasn’t much that swam in or flew over, the bay that didn’t end up in a pot on the stove or on the rotisserie. Every now and then, pals from the Pine Barrens would drop off critters at his house on Engleside Ave. in Beach Haven. Mostly ones with four legs, ones you didn’t see much on Long Beach Island. In summertime, it wasn’t unusual to see a couple of bushel baskets sitting in the shade of his front porch, lids loosely attached and rattling intermittently…a sure sign of pissed off snapping turtles, one of the most deceptively docile and get-angry-in-a hurry critters you can mess with.
And this is the knife that Uncle Jack used to make quick work of an otherwise impenetrable box of bones and cartilage that housed the key ingredient for making his famous snapper soup.
